Possibly because the card in question will finally be powerful enough to fuel the game it's bundled with out of the box?

It's common for bundled games to be prior generation 'high-end' titles. It shows the power of your hardware, without risking the chugging that bundling a bleeding edge game would introduce.

Savvy marketing, really.

If you purchased a new video card, and the 'featured' game looked fantastic, but ran painfully slowly, you would likely feel ripped off.

By including a game that was slower on all former incarnations of hardware, as an example of how much better the new card is, you look like a greater innovator than you are, to the average consumer.

Good marketing, really.

Also it is probably way cheaper to bundle an old game instead of a brand new one....=)
