It's an interesting point, but I've never seen much value in it. If you take a look, it's actually pretty rare that all the AAA developers have an excess of job openings.

IF your team can't make all the assets in time, the trend seems to be simply outsourcing some art.

That, and actually hiring competent artists. It remains true that most good companies are still looking for people who actually have general skills; a modeler can do only half the work that a modeler and texture artist can.
